Beef Dincaster (Keto Beef Wellington)


We decided to do the famous Beef Wellington. The idea was to meet up, do some exercise in the morning and than go keto all over the kitchen. We based it on a recipe from Gordon Ramsey's website.
  


Ingredients:

400g flat mushrooms
olive oil or butter
750g prime beef fillet
2tbsp of wholegrain mustard
sea salt, pepper and garlic powder (to season beef)
6-8 slices of Parma ham
1 egg

Instructions:

Put mushrooms in food processor with seasoning and make a rough paste.

Put paste into pan and cook over at high heat for 10min. Toss frequently to get moisture out. Spread on plate.

Heat olive oil (you can use butter if you wish) in a frying pan.
Massage seasoning into the beef and sear in the hot pan for 30sec each side.
Allow to cool then brush with mustard.

Lay Parma ham on a cling film. Ham over lapping.
Spread mushroom paste over and put beef in the middle.
Roll it and chill for 15-20min.

Make Fat Head Pizza dough with double the ingredients to make enough pastry.
Spread it over cling film big enough to be rolled around the beef.

Wrap beef in the pastry and brush with egg.
Chill for further 15 minutes.

Score.

Bake it in the oven for 20 min at 200 degrees Celsius, 15min at 180 degrees.
Remove from oven and rest for 10-15min.
